Miramar is the top area of the farm at Los Nogales, which Matt visited in March of this year. This lot is both red and yellow Catuai. Cherries are picked and brought immediately to the depulper for removal of around 20% of the mucilage. Beans are then bagged in jute for transporting to preserve any mucilage loss and placed in thin layers on a raised bed where they are consistently turned to achieve an even drying. This normally takes around 15 days depending on the weather.
Tasted at origin by Matt, it immediately tasted to him like the juice from the coffee cherry itself, and he couldn't resist but order hundreds of kilos on the spot. We hope we can bring that same experience to you at home! This coffee lends itself to all brew methods, pairing great with milk but also (on Matt's recommendation) tastes incredible just black.
